Slow Cooker Chex Mix

This recipe is inspired by my nephew, he’s taking culinary arts in high school (aka home economics). It reminded of when we made Chex Mix in home ec so I had to make some in the slow cooker to take a trip down memory lane. This recipe does require a little babysitting. If you do not stir it every half hour you risk burning the mix.

To make a batch of our Slow Cooker Chex Mix you will need the following –

1/2 C Butter
1 Pkt Ranch Dressing Mix
1 TBSP Sugar
1 TBSP Worcestershire Sauce
1 TBSP Light Karo Syrup
4 C Corn Chex Cereal
3 C Mini Pretzels Twist or Rods
3 C Oyster Crackers
3 C Cheez-It Crackers
1 C Peanuts, Salted Dry Roasted

Give your slow cooker a generous spray with non-stick cooking spray.

In a microwave-safe bowl melt the butter in the microwave.  Melt the butter in 15-30 second intervals until it is melted.

Add the Ranch mix, sugar, Worcestershire sauce, light Karo syrup to the melted butter and whisk it until dissolved.

Pour the cereal, pretzels, crackers and peanuts into the slow cooker.

Pour the butter mix over the cereal mix. Gently stir/toss the mix until the butter mixture is coating the cereal mixture.

Place the lid on the slow cooker, set it to low.

For the next 2-3 hours you will stir this mixture every 15-30 minutes to prevent burning. When the butter mixture has set into the cereal mixture and it no longer looks damp you are finished cooking.

Let it cool and store in an air-tight container. The Chex Mix will stay fresh for about a week.
