Slow Cooker Salsa Chicken Tacos

It’s taco Tuesday! Who doesn’t love tacos? I know my family does. This slow cooker salsa chicken taco is another one the kids can throw together with a little help. A little pro tip – I like to use a food processor to dice the onions super fine. That way my kid doesn’t really notice them. These slow cooker salsa chicken tacos are always a hit. They are juicy, tender and packed full of flavor. They also make great quesadillas the next day too.

Slow Cooker Salsa Chicken TacosTo make a batch of these slow cooker salsa chicken tacos you will need the following –

1 lb Chicken Breast, boneless and skinless
1 C Salsa
1 can Rotel
1 pkg Taco Seasoning
1/2 c White Onion, diced

In a small bowl, combine the salsa, Rotel, and taco seasoning. Stir until well combined.

In the slow cooker, place the chicken in a single layer and top with the diced onion.

Next, gently pour the tomato mixture over the chicken without washing the onions off.

Place the cover on the slow cooker, set to low, and cook for 7-8 hours or high 3-4 hours.

Once the cooking time is up you can either remove the chicken from the pot and shred it or shred the chicken with 2 forks in the slow cooker.

After the chicken has been shredded, give it a quick stir to combine the tomatoes and juices.

Serve in your favorite taco shells or tortillas.
