Everyone seems to be crunched for time. And we all want to be healthier. I find myself looking for quick weeknight meal ideas that are healthy, nutritious, taste good and can be made fairly quickly. And I find myself making the same dishes over and over again. Why? Because it’s easy. I know how long it takes to make and I don’t have to think. Am I happy about that? Nope. I think dinner time is an important time in families. It’s the time of day the whole family comes together and shares what has transpired. So, I like to serve a tasty, nutritious meal at dinner time. The week we tried Blue Apron, the meals were pretty out of the ordinary for my family. I was not sure how well some of them would go over. We tried South Indian Squash Curry, Crispy Chicken with Mashed Potato and Spicy Collard Greens and Roasted Pork with Beet and Cranberry Agrodolce. I was extremely skeptical that the pork dish or the curry dish would be received well. But I made them anyways.
To my surprise, all the dishes were good. I was shocked how much we all loved the beet and cranberry agrodolce. Normally, I hate beets and won’t touch them. But they were amazing! The whole roasted pork recipe was a huge hit. We had nothing left over.
The next evening we tried the South Indian Squash Curry. Again, I was not sure how this would go over. We are not fans of curry so I was a little anxious about making this dish. And again, we were surprised. I loved how the squash and curry seasoning came together.
And the last dish I made was the Crispy Chicken with Mashed Potato and Spicy Collard Greens. I had never cooked collard greens before nor had I ever tried them. This was outside of my comfort zone but I went for it. I really liked them! Peyton was not crazy about the collard greens but she loved the mashed potatoes and chicken so she was fine. And I was ok with her not liking them because I wanted them all for myself.
Our first week with Blue Apron was a taste adventure. We tried several new flavors and food that we had never had before. Each time I was surprised at how well the ingredients worked together and how much we like the dishes.
I do like the convenience of having Blue Apron delivered right to my doorstep. But one complaint I had was you can only order certain recipes together. Before I had my first box delivered I wasn’t sure why there was a restriction but after having a box delivered I understand. You will use some of the same ingredients in several recipes. For us, it was the garlic. I used it in all of my recipes. Blue Apron seems to group recipe choices together that share ingredients. Like I received a whole bulb of garlic to use in the 3 recipes versus a few cloves in each.
Blue Apron’s menu choices change each week. Each week a fresh box will be delivered with your menu choices on Wednesday, Thursday or Friday, depending on the delivery schedule you chose. When it arrives, simply take the meat and place in fridge, wash and dry vegetables and put them away. I have found that if I wash and dry my potatoes and then leave them on the counter they stay fresh longer than placing them in the fridge. You can skip a week or more whenever you would like. And you can switch out recipes too. Blue Apron is very flexible.
