A tradition in our family is to get Shamrock Shakes from McDonald’s every March. It’s a Friday tradition. So I decided to turn them into a cupcake! This cupcake is inspired by the Shamrock Shake at McDonald’s. The cupcake has a light mint flavor and the frosting is reminiscent of the whipped cream on top. They are light and taste delicious!
To make a batch of these St Patrick’s Day cupcakes you will need the following –
1 Box White Cake Mix and everything needed to make it
1/2 tsp Mint Extract
Green Food Coloring
2 C Heavy Whipping Cream
4 TBSP Vanilla Instant Pudding Mix
St. Patrick’s Day Sprinkles
Maraschino Cherries
You will also need a muffin pan and some cupcake liners. I like to use decorative cupcake liners but Amazon has some really cute ones for St. Patricks’ Day.
First, set your oven to 350F, move the rack to the center and place the cupcake liners in your muffin pan.
Next, make your cake mix according to the directions on the box.
Once you have it all mixed add in the mint extract and green food coloring. Mix until well combined.
Fill the cupcake liners 3/4 full. I like to use a large cookie scoop to fill my cupcake liners.
Bake at 350F for 15-18 minutes. You will know they are done when you insert a toothpick in the center of the cupcake and it comes out clean.
Let the cupcakes cool completely to room temperature.
In a large bowl pour the heavy whipping cream and beat on high speed.
When the whipping cream starts to thicken start adding in the pudding mix, slowly, until you have stiff peaks.
Place the frosting in a piping bag with 1M Wilton tip and pipe a swirl of frosting to the cupcake.
Sprinkle with the St. Patrick’s Day sprinkles.
Top with a Maraschino cherry.
Enjoy!
Store in fridge in an air-tight container.
