Who doesn’t stop at a fudge booth when you walk past it at the fair? or at a festival? We do! I always have to sample a few before I make my decision. We chose to make Buckeye Fudge because we fell in love with Buckeye’s when we were in Kentucky a few years ago. So when I was trying to decide what flavor of fudge to make, deciding to make Buckeye Fudge was an easy choice.
The key to amazing Buckeye Fudge is the smooth peanut butter, it really makes the fudge. The smooth sweet peanut butter paired with chocolate is a winning combination.
To make your own Buckeye Fudge you will need the following –
1 C Peanut Butter
1 C Butter
1 tsp Vanilla Extract
3 1/2 C Powdered Sugar
7 ounces Sweetened Condensed Milk
1 1/2 C Semi-Sweet Chocolate Chips
2 TBSP Butter
I made this recipe in the microwave just to see how it would work out. And it worked out well!
In a microwave save bowl, place the butter, peanut butter, and vanilla extract. Microwave for 90 seconds.
Remove and mix to combine the peanut butter and butter.
Gradually add the powdered sugar, 1 cup at a time, until it’s well combined.
Pour in a 9×9 pan and smooth the mixture out until it’s level.
In another microwave-safe bowl, combine the chocolate, condensed milk, and butter. Microwave for 90 seconds.
Remove and stir to combine the chocolate, milk, and butter. You may need to microwave for 15 additional seconds if the mixture is not smooth.
Pour on top of the peanut butter mixture and smooth.
Let cool for a few hours or place in the fridge.
Once the fudge is firm, slice into bite-size pieces and enjoy.
Place any leftover fudge in an airtight container and store in the fridge. It’ll last up to 1 week.
