One of my favorite memories from childhood is enjoying a strawberry poke cake on those warm summer days. Summer is the perfect time of year to make a strawberry poke cake, especially in June or July, that’s when the strawberries are at their peak in Minnesota. Plus poke cakes are extremely easy to make. A beginner can easily make a delicious poke cake.
To make your own strawberry poke cake you will need the following –
1 box of White Cake mix ingredients called for to make the cake per the box
1 C Boiling Water
1 box Strawberry Jello
1 tub Cool Whip
1 container Strawberries
This cake tastes best if it can sit overnight. Then the jello can soak into the cake.
First, mix the cake mix per the box directions and bake in a 13×9 inch pan.
Let the cake cool for about 20 minutes before the next step.
While the cake is cooling it’s time to make the jello mix.
Take 1 C of boiling water and combine with the strawberry jello. Stir until the jello dissolved.
Poke holes about an inch apart in the cake. I used a straw but you can use the handle of a wooden spoon.
Carefully pour the jello mixture on the top of the cake, be sure to get the mixture into the holes.
Let the cake completely cool. Wait at least an hour before you do the next step.
Spread the cool whip over the top of the cake. Be sure to completely cover the cake.
Decorate with strawberries.
Enjoy!
Be sure to store the cake and any leftovers in the refrigerator. I suggest covering it before placing it in the refrigerator to avoid drying out or absorbing other fridge food odors.
