When the weather warms up, it’s officially pasta salad season! One of my favorite things about this recipe is how easy it is to make ahead. In fact, it tastes even better after it has had a few hours to chill in the refrigerator, allowing all of the flavors to come together. That makes it an ideal recipe for busy hosts who want to prepare food before guests arrive.

To make my best tortellini pasta salad you will need the following –
8oz Fresh Mozzarella Balls
16oz Bottle Italian Dressing
3oz Black Olives
2 Tomatoes (Diced)
8oz Pepperoni Stick (Diced)
12oz Bag Cheese Tortellini
Tip – Look in the gourmet cheese case for the Mozzarella balls. If you can’t find them you can also use Mozzarella whisps or slice Mozzarella into chunks.
This is a really simple recipe. But it does taste best if it can set up overnight. So make it a day ahead of time for the best flavor.
First, slice up the tomatoes into bite-size pieces. Do the same with the pepperoni stick and if needed the Mozzarella cheese (only if you could not find the balls).
Next, combine the Mozzarella balls, black olives, diced tomatoes, diced pepperoni stick, and cheese tortellini in a large bowl.
Toss with the Italian dressing.
Cover tightly and refrigerate overnight.
Before you serve the salad be sure to give it a big stir to coat it all in the salad dressing again. Then……

This salad will keep for a few days in the fridge. It travels well, making it a great salad to bring to BBQs and cookouts.
