Since I’m a busy mom, I chose the short cut. I used a sugar cookie dough that was already made and I took it one step further and used one that was portioned out as well.
To make the Ultimate Twix Cookies you will need the following –
1 package Sugar Cookie Dough
1 bag Caramel Bites
1 bag Milk Chocolate Chips
This recipe makes 24 Twix Cookies.
Bake the sugar cookies per the directions on the package. You want to bake them until the cookies are golden brown around the edges. Remember, Twix have a crunchy cookies so you want your sugar cookie crunchy and not soft and chewy.
When you remove the cookies from the over you want to use the bottom of a glass or measuring cup to flatten the center so there is a small ridge all around the cookie. I used the bottom of a 1/4 c measuring cup and it worked perfectly.
Let the cookies cool.
Once the cookies have cooled it’s time to melt the caramel bits. Pour the caramel bits with 1-2 tbs of water in a microwave-safe bowl. Melt the bits in 30-second intervals, being sure to stir in between. You want to melt the caramel until it’s a smooth creamy texture.
With a spoon, drop a dollop of the caramel in the center of the cookies. You may need to shake each cookie a little to get the caramel to spread around.
While the caramel is setting up it’s time to melt the chocolate. Place the chocolate chips in a microwave-safe bowl and melt them in 30-second intervals being sure to stir them in between.
When the chocolate is smooth, drop a small dollop of milk chocolate on top of the caramel. This one you will most likely have to shake the cookie to get the milk chocolate to cover most of the caramel.
Let the cookies sit until the chocolate has hardened.
These are great cookies for potlucks, holiday parties are any day. Just be sure to store them in an airtight container to keep them fresh.
