Taco Tuesday Casserole!

It’s taco Tuesday! Whose looking for a healthy alternative so they can still partake in Taco Tuesday without throwing their weight loss plan out the window? If you answered yes, then I have the recipe for you. This yummy, Weight Watchers Taco Casserole yet low-fat recipe is perfect for those trying to shed a few pounds and/or living a healthier lifestyle. It’s packed with all the flavor but not the fat. Even Peyton devoured this casserole. Though, she did request that I not add onions next time. Too bad I’m not going to honor that request!

You will need the following –

1 lb Ground Turkey or Chicken
1/2 c Yellow Onion, chopped
1/2 c Green Bell Pepper, chopped
1 Clove Garlic, minced
1 pkg Taco Seasoning
8 oz Taco Sauce
1 c Fat-Free Sour Cream
1 c Fat-Free Cottage Cheese
1 c Low-Fat Tortilla Chips
1 c Low-Fat Mexican Cheese, shredded
3/4 c Salsa
Table Onions

Cooking Spray
2 quart Casserole Dish
Cutting Board
Sharp Knife
Skillet
Spatula
Bowl


This recipe is fairly quick. Not many steps and from start to finish it’s about 45 minutes.

First, preheat the oven to 400.

While the oven is preheating chop up your onion and pepper.

Combine the ground meat, onions, pepper, and garlic in skillet. Cook until the meat is cooked all the way through and the onions are soft.

While the meat is cooking prep the casserole dish.

Spray the bottom of the dish with the cooking spray.

Line the bottom of the dish with a layer of crushed chips.

Check on the meat mixture, stir it frequently. Once the meat is cooked add in the taco seasoning and taco sauce. Stir until it is combined then set aside to cool.

Weight Watchers Taco CasseroleWhile the meat mixture is cooling it’s time to make the sour cream filling.

In a medium-size bowl, combine the cottage cheese and sour cream.

Now, take the meat mixture and pour over the crushed tortilla chips in the casserole dish.

Weight Watchers Taco CasseroleThen, pour and spread the sour cream mixture of the top.

Cover the sour cream mixture with the Mexican cheese.

Lastly, sprinkle a few more crushed tortilla chips over the top and place in the oven.

Bake for 30 minutes, uncovered.

Weight Watchers Taco CasseroleI topped ours with fresh salsa and sliced table onions. You can add other toppings but if you are following Weight Watchers be sure to add them in the app for the point values.
