We are huge caramel popcorn lovers in this house. Whenever I buy a bag, Peyton eats it the instant we get home. She even hides it so she is the only one to get any! But the store bought caramel popcorn is full of preservatives, trans fat and lots of other ingredients I rather keep out of Peyton’s diet. MELT Organic sent me a recipe for Caramel Corn to try out. With the holiday weekend, I thought it would be a good time to make a batch to take with us to watch the fireworks.
Here’s what you’ll need to make your own batch of Caramel Popcorn – 1 cup packed Dark Brown Sugar
1/2 cup Sugar
1/8 cup Water
1/3 cup Rich & Creamy MELT Organic Buttery Spread
1 tablespoon Light Molasses (I couldn’t’ find light Molasses so I used 1 teaspoon of Molasses)
1 1/2 teaspoon Vanilla Extract
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1/2 cup corn (to pop)
I know it looks like a lot of ingredients but this is really an easy recipe to make.
First, take your air popper and pop the 1/2 cup of corn and set aside. I placed mine into a huge glass bowl.
Next, take a jelly pan or a baking pan with edges and spray non-stick cooking spray on it.
Preheat your oven to 250.
In a saucepan, combine the brown sugar, sugar, water, MELT Organic buttery spread and molasses. Bring to a boil and let boil for about 5 minutes. Turn off your burner and move the pan to a cool burner. Add in the vanilla, baking soda and salt. I found it best to stir with a whisk to break up any clumps from the baking soda.
Pour the mixture over the popcorn and slowly work at coating each piece of popcorn. Take your time or you could end up breaking down all your nice, big, fluffy popcorn pieces and end up with little kernels. Once the popcorn is coated, pour it onto the greased pan and bake at 250 for 45 minutes. Every 15 minutes be sure to turn the popcorn. If you forget to do this step, you may end up with burnt caramel corn.
When the 45 minutes is up, take the pan out of the oven and let it cool for 15-20 minutes. That’s it. I would recommend having some hot soapy water nearby to throw your dirty pan and bowl in. The sugar can get pretty sticky if let cool.
