I love using the crock pot to make dinners during the week. And one of my daughter’s favorite dishes is my Creamy Chicken dish over rice. Not really sure where this recipe came from. I think it’s pretty basic. To get started you will need the following:
Crock Pot
Slow Cooker Liners
1 can Chicken Broth
2 cans Cream of Chicken Soup
1 – 2 lbs boneless skinless Chicken Thighs
1 can slice mushrooms
diced garlic
onion
Minute Rice
Choice of Vegetable
This is a super simple dump recipe. First place the liner in the Crock Pot and then dump in the soup, chicken broth, chicken. mushroom, garlic to taste (I use about 2 teaspoons) and diced onion (I used half the onion). Place lid and let cook about 6 hours.
Chicken thighs are great for the slow cooker. The are always moist and are forgiving if a little over cooked.
Now when the chicken is done turn off the slow cooker and remove the lid. It will be extremely hot so let it cool while you are cooking the rice and vegetable. I like to cook my rice in the microwave with a rice cooker. Takes about 8 minutes for it to cook. And then either use fresh, frozen or canned vegetables for a side dish. Dinner will be on the table with in twenty minutes of walking in the door!
