Gourmet Chocolate Chip Muffins

Every week I make a fresh batch of muffins for my family. They are easy to grab and go on the way to school, work or activities. And it’s one way I know my daughter will have something for breakfast on her way to school. I am making Chocolate Chip Muffins this week because what teen doesn’t love chocolate?

To make a batch (about 12 muffins) you will need the following –

2 C All-Purpose Flour
1 Tbsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 C Butter, melted
1 C Sugar
2 Eggs
2 tsp Vanilla Extract
1/2 C Whole Milk
1 1/2 C Chocolate Chips

If you love chocolate you are going to love these chocolate chip muffins. You can use any type of chocolate chip you prefer in the recipe. I used milk chocolate because that is what my daughter loves. But feel free to use semi-sweet or dark chocolate. These are your muffins and you can do what you want!

This recipe will make a dozen regular-size muffins. It takes about 20 minutes for baking time.

First, you are going to preheat the oven to 425F.

Then, in a large mixing bowl you are going to combine the flour, baking powder, baking soda, and salt. Give it a quick stir to combine.  Then set aside.

In another large bowl, beat the butter and sugar together until well combined.

Add in the eggs and beat until combined.

Next, mix in the milk and vanilla extract.

Add about a third of your dry mixture and mix until well combined. Repeat this step until all your dry mixture has been added.

Fold in your chocolate chips.

Scoop into muffin liners until they are 3/4 full.  These muffins will rise a little but not much so they do not need a lot of room.

Sprinkle a few chocolate chips on the top of the muffins.

Reduce the oven temp to 375F and place the muffins into the oven.

Bake for 15-20 minutes. You will know the muffins are done when you can insert a toothpick into the center of the muffin and it comes out clean.

Remove from the oven and let set for about 5 minutes in the muffin pan before transferring them to a cooling rack.

Enjoy!

These will keep for about a week in an air-tight container in the refrigerator or 3-5 days in an air-tight container on the counter.
