Therefore, you will benefit much more from eating them than if you were to roast or fry them. Of course, if you really want to get the most out of vegetables, then you could even think about eating them raw. Raw is the best in terms of the goodness you are looking for, and this is boosted if you also leave the skin on the vegetables before you eat them.
