Today was the first day of summer camp! Where Peyton is attending summer camp she has the option of eating the lunch provided by the program (a federally funded and approved lunch program) or bringing lunch from home. Well, I’ve looked over the menu and I can honestly say I do not see how it’s a balanced lunch. There is so much processed, carb filled foods with very little protein. Isn’t this the time, in Peyton’s childhood, where she needs protein, calcium, fresh fruits and veggies? So I’ve decided that this summer I will be making Peyton’s lunch at home and sending it with her to camp. That t way I know she is eating a balanced, healthy, nutritious meal.
This is my first Bento Box meal in a while so my creative juices were not really flowing. But I decided to make Peyton PB&J Sushi! It’s actually very simple to make and kids love it!
I like to roll my bread flat, that way Peyton get’s more peanut butter and jelly than bread. Then I trim the crust off and spread the peanut butter and jelly on the bread. Once I have the desired amount of PB&J, little tip – less is better or it becomes too messy, I roll the bread up and slice it with a serrated knife into bite size pieces.
Now I had my main dish ready but I needed to give Peyton a few more choices. So I decided to fill the rest of the box with fresh blackberries, sliced cherries with the pit removed, Finding Dory goldfish crackers and 2 cookies for a treat. Everything she needed in her Bento Box.
This was a fairly simple and quick meal to prepare. The best part was when Peyton came home this afternoon the Bento Box was empty! She ate the whole meal.

Great box. Wish they would have had these in the 90’s when my kids where small. They had lunch boxes, and what a mess that was.
