We had such a busy day today! Peyton and I are in Chicago visiting family and decided to take a day trip to the Lincoln Zoo. It was our first time and we had a blast! After the zoo, we went back to my Aunt's house and we spent the rest of the day with our family. It was a warm day out, which means the kids are looking something cold to enjoy. But with all these children, we run into a few dietary issue. We have one that is lactose intolerant and another that has issues with Gluten. So, finding a ...

Celebrate Summer with FatBoy
Doesn't it feel like summer is just flying by? It seems like just yesterday was the last day of school. It feels like we should still be at the beginning of summer. But were not. School starts in 4 weeks. FOUR WEEKS! Did you get that? In 4 weeks, Peyton will be back in school. Summer will have come to an end. So I'm going to hold on to summer for as long as I can. And for us, that means enjoying as many strawberries as possible. Aren't they the poster child for summer? Strawberries make ...
S’Mores Brownies
Peyton and I really have a sweet tooth. And while I was out shopping the other day I came across this baking mix from Betty Crocker - Hershey's s'mores premium dessert bar mix. Of course, I just had to pick up a box and try it out. I was curious if this was really going to taste like a s'mores and how hard was it going to be to make. Turns out, it's fairly simple to make! There is a graham cracker crust. You do have to make that, but it's really simple. Just melted butter and the graham ...
Caramel Corn the MELT Organic Way
We are huge caramel popcorn lovers in this house. Whenever I buy a bag, Peyton eats it the instant we get home. She even hides it so she is the only one to get any! But the store bought caramel popcorn is full of preservatives, trans fat and lots of other ingredients I rather keep out of Peyton's diet. MELT Organic sent me a recipe for Caramel Corn to try out. With the holiday weekend, I thought it would be a good time to make a batch to take with us to watch the fireworks. Here's what you'll ...
Cupcakes in Ice Cream Cones?
Once in a while I'll see a cute photo of what I think is an ice cream cone and really it's a cone filled with cake! So when I saw the cupcake ice cream cone pan I just had to buy it so I could test it out. I wanted to see what was so special about this pan. It's a rectangular cake pan with an insert to hold 12 ice cream cones. Could you do without? Maybe, but you'd have to be careful when moving them around so they do not tip over AND be sure there are no large vibrations throughout the home ...
Don’t Forget the Popsicles!
The 4th of July is right around the corner. In less than 4 days families will be getting ready to celebrate our independence on a (hopefully) beautiful summer day. With all the kids we have coming over to our house I stocked up on some Popsicle treats. What better way for the kids to cool down after a day of swimming while waiting for it to get dark for fireworks? While I was at the store looking over the impressive selection of Popsicles I thought back to my childhood. We did not have nearly the ...
