  • A Night at Medieval Times

I am always looking for new and unique experiences to take Peyton to. And when I saw Medieval Times, I knew I wanted to take her! How cool would it be to sit in a castle, watch knights jousting and have dinner? It sounded so cool. The only problem is, there is no castle in… [Continue Reading]

  • A Little Throwback to Sea World

One of my fondest memories growing up was the vacation my grandparents took me on to Sea World. I was about 6 years old and it was my first time to a park with sea animals. Oh boy was I excited! Back in 1983, Sea World was a lot different than it is now. I… [Continue Reading]

  • A Guide to Hawaii Food Culture

Hawaii’s food culture is a rich tapestry woven from its diverse ethnic heritage, abundant natural resources, and deep-rooted traditions. This unique culinary landscape offers a feast for the senses, blending flavors and techniques from Polynesia, Asia, and the mainland United States into something distinctly Hawaiian. Whether you’re savoring a traditional luau feast or grabbing a… [Continue Reading]

  • Kona Ice of Stillwater

Every weekend I look for food trucks that will be in our local area. Since the Minnesota State Fair was canceled and we can’t really travel much, finding and trying out new food trucks every weekend has kinda become our thing. I’ve seen Kona Ice of Stillwater posts in our local mom’s groups and I… [Continue Reading]

  • What’s New at Valleyfair for 2018

Growing up, the annual trip to Valleyfair in Shakopee, Minnesota was a day we all looked forward to. Every year there is always something new at Valleyfair. We’d usually go once with family and once with school. I have many fond memories of those trips. Now, that I am a mom, I take Peyton to… [Continue Reading]

  • Mammoth Site

Peyton has a fascination with dinosaurs. There was one point when she would only watch The Land Before Time and Ice Age movies. She’s better now and watches other shows but when I saw an opportunity to take her to a site where they are excavating Mammoth bones I knew I had to take her.… [Continue Reading]

  • Toll Roads No Problem with the FastToll App

Peyton and I are in the Chicago area at least every other month. But I don’t want to invest in an I-Pass because I don’t need it in Minnesota. And Illinois is really the only place that we travel that has toll roads. But stopping at all those toll roads adds on travel time. That’s… [Continue Reading]

  • Crazy Horse

South Dakota is steeped in history, it’s one of the main reasons I chose to take the kids here for MEA break. After visiting Mount Rushmore  we headed over to Crazy Horse. It’s only about a 15-20 minute drive. Crazy Horse is a privately funded memorial surviving on donations from the public. It’s a shame there is… [Continue Reading]

State Fair Giant Marshmallow Trix Treats

Our last giant marshmallow treat was such a hit I decided to make another one. This time, Peyton and I headed to the grocery store and looked for a fun cereal to use. And we came home with........Trix Trolls World Tour with Marshmallows cereal! Trolls World Tour was a big deal in our home when it came out. I think Peyton watched it over a dozen times the first weekend.  So we decided we wanted to try this cereal and turn it into a giant marshmallow treat! To make these at home you will need ...

State Fair Peach Lemonade

Whenever we go to the Minnesota State Fair, having fresh-squeezed lemonade is a must. It's one of the first things we look for once we pass through the gates. But sometimes, at various state fairs, you can find flavored lemonades.  So, today we are going to make peach lemonade. It still starts with the fresh-squeezed lemons for the base but now we are going to give it a little twist with peaches. To make a batch of State Fair Peach Lemonade you will need the following - 3 large Peaches 1 ...

State Fair Cream Cheese Wontons

While this food is not a traditional fair food it is inspired by our one and only Lee-Ann Chins. A Minnesota company that has had a booth at the Minnesota State Fair in the Food building. Plus, these cream cheese wontons are a staple for me. I LOVE them! I know throughout the United States you can find different variations in the filling of a wonton but for me it's all about simplicity. You don't need a ton of stuff in there, just cream cheese. While these are a simple dish to make at home ...

State Fair Chocolate Chip Cookie Dough Fudge

Fudge is a treat I usually only indulge in a couple of times of the year. The Minnesota State Fair is one of those times. I'll buy a sample box with 5 different flavors and savors it for a few weeks. But with no Minnesota State Fair this year, only a drive-thru fair that does not include fudge and very limited travel for Peyton and myself we have not bought any fudge! So this year, I'm making some! This fudge is not as dense as most fudge I usually buy, it's a lighter fudge, very creamy. If ...

State Fair Pork Chops on a Stick

About 3 years ago, Peyton discovered Peterson's Pork Chops on a Stick at the Minnesota State Fair. I had never tried them before because I just thought, it's a pork chop, I can eat that any time. But what makes these pork chops so special is the season and the grilling. They are juicy and full of flavor. And once you've taken a nibble you'll want your own.  Without the Minnesota State Fair this year Peyton was really bummed she wasn't going to get her fill of Peterson's Pork Chops on a Stick. ...
